The Wallaby is a continuously hopped (with 2 oz.) Saison featuring citruisy and floral Australian Galaxy hops. Yeast selection and fermentation temperature will affect the flavor this recipe considerably. Both the Wyeast 3711 and White Labs 566 are recommended in the 70-85F range.

Use the selection list to choose which yeast you'd like with this kit. We recommend using White Labs WLP566. The dry yeast (Belle Saison) will be more resilient through the shipping process, although we do include cold packs during warm months with our liquid yeast to help ensure freshness.
