This is the Granddaddy of Belgians, STRICT OBSERVANCE is a high-gravity, complex Dark Strong Ale, following in the tradition of the 8 famous Trappist breweries. This beer will develop dark fruit aromas, like raisin, cherry, and plum. Fruity, peppery, bready, and caramel flavors will blend nicely with the presence of alcohol. Put some bottles of this beer in the cellar and enjoy it in 2...3...5 years!

This kit comes with yeast, select which you'd like above. And because this is such a high gravity beer, we recommend purchasing a second yeast pack or making a starter. While the liquid yeast (WLP545 and Wyeast 1388) is our preferred yeast for this kit, the dry yeast (Abbaye) will be more resilient through the shipping process, although we do include cold packs during warm months with our liquid yeast to help ensure freshness.
