Malt extracts are the heart of the
beer for most brewers. This is where you get the basic flavor of
beer. Without a good extract, and enough of it to give the beer
body and flavor, you can’t make a good beer. We carry a wide
range of extracts and have a very rapid turnover so our stock is
always fresh. If you don’t see something you want, we can
probably get it for you in several days’ time. Cases of 6,

Malt
Extracts; Dry
Spray-dried malt is a form of malt
extract in which most of the moisture has been removed. It is similar
to liquid malt extracts except that 3 lb. of dry malt is the equivalent
of 3.3 lb. of liquid malt extract. For the most part, they may be
used interchangeably. If your recipe calls for a 3.3 lb can of a
light malt extract, you may substitute 3 lb. of dry malt instead.
Additionally, many brewers will augment the can of extract they
use by adding 1 or 2 lb., or even more, of dry malt to increase
the amount of malt used in a recipe. We recommend this. A rule of
thumb goes: Use 1 lb. malt for every 1 gallon of beer produced-
to make a medium bodied beer. Thus you should use at least 5 lb.
of malt in 5 gallons of beer. To make yet richer and fuller-bodied
beer, use more than 5 lb. of total malt in the recipe. Some recipes
may use as much as 12 or more lb. of malt. Whew! Rich and high in
alcohol indeed! We sell several brands of dry malt, though the one
we mainly stock is the Breiss.
Breiss Dry Malt Extract
From Chilton, Wisconsin. Maker of
our most popular dry malt. Breiss is also the producer of many specialty
malts used by U.S. breweries. This is our main dry malt.

Dutch Dry Malt Extract
Imported from Holland. Finishes with more dextrin and makes a fuller-bodied
beer. Special Order. Call.
Rice Malt Solids May be used in place of some malt
extract to make lighter American style beers. A well-known St. Louis
brewer uses rice in its beer. Add 3-4 cups maximum to a light lager
beer, light in hops, to duplicate American light lagers.
