Lagers are different from Ales
in that they need ideally to be fermented at cooler temperatures,
35-55F. They are then stored at a cooler temperature, from which
the German word lager is derived, usually near 35F. The more you
depart from these temperatures the more ale characteristics you
will have in your beer. A lager fermented at warm ale-like temperatures
can be quite good, but different from a lager. It will be more fruity
and estery in aroma and flavor.

| Terrace
Pilsner
Our pilsner is similar to Old
European pilsners of medium malt and assertive hoppiness.
To create a robust style beer, ferment at room temperatures.
For true lager flavors, ferment cool (50-55°F ) for 10
days, then store at 35-40°F for 3-4 weeks. You’ll
notice the imported hop bite in this beer.
Made with one of our premier
pilsner malt extracts, selected specialty
adjunct grains, imported Czech Saaz hops, lager, or liquid
yeast, and corn sugar for bottling. $39.99

| Gathering
Swallows Octoberfest
This Octoberfest is an amber,
malty beer with a medium hop finish. It should be lagered
to attain the smooth finish characteristic of the style. We
recommend giving it 6-8 weeks before being consumed. Liquid
yeast
Made from malt extracts, malt
grains, liquid beer yeast, N Brewer and Hallertauer hops,and
corn sugar (for priming). O.G. ~1.052 IBU's ~24. $40.99

| Gemutlichkeit Octoberfest
Gemutlichkeit Octoberfest is malty, smooth and has a slightly hoppy bitterness. It is moderately high in alcohol and should be drunk with pleasure and comfort in mind. The Gemutlichkeit Octoberfest will have more of a Munich malt character than our Gathering Swallows Octoberfest kit. $45.99

Monster Mai Bock
This is a high gravity, moderately sweet
Maibock. It is light in color which disguises
its deceptively high alcohol content. Drink in
desperate moderation. Allow 8 weeks for
flavor to develop.

| Red Badger Lager
This beer is a favorite of
our customers who like red color in their ales or lagers. It is spicy and
finishes dry. If you lager it will take 5-6 weeks to finish.
Made from amber malt extract,
malt adjunct grains, Hallertauer and Saaz hops and liquid
beer yeast. O.G. 1.040 IBU’s 20. $37.99

Rah Rah Bock
Our Bock is true to the style:
deep copper color, rich malty flavor with chocolate malt undertones.
It is medium in hoppiness with a slight “noble”
hop aroma. This is a real winter warmer. Let it age for 6-8
weeks to bring out its full flavor. May be fermented cold
for cleaner lager type flavors.
Made with over 7 lbs. of
malt extract, our imported lager hops, special combination
of adjunct grains, dry or liquid lager yeast, and corn

| Mad City Munich Dunkel
Mad City Munich Dunkel is malty, smooth and has a slightly hoppy bitterness. The German Tradition hops will balance the heightened maltiness that the Munich malt extract lends the beer. A great beer for the price. Any price, for that matter! $34.99
